Ingredients:
6 – 8 chicken breasts, halved
2 Tbsp olive oil
5 cloves garlic, minced
½ yellow onion
1 cup heavy cream
1/3 cup chicken broth
3/4 cup grated parmesan cheese
1 tablespoon Italian seasoning blend or any combination of parsley, basil, oregano
1/2 cup roasted red peppers thinly sliced
2 cups fresh spinach
Salt and pepper to taste

Directions:

1.Set a pan over medium heat; add chicken and olive oil. Brown chicken should be done on either side after roughly ten minutes. Take chicken to a platter; cover; then set aside.
2. Add oil, onion, and garlic back in the pan; sauté until onion is golden brown and transparent.
3. Incorporate the chicken broth and heavy cream. Stirring will help you to gently simmer; lower heat to low and simmer for roughly ten minutes.
4. Whisk the parmesan cheese. The sauce will start to thicken.
5.Add roasted peppers, spinach, spices, salt and pepper; let cook until the spinach is barely wilted.
6. Reintroduce the chicken to the pan and ladle the sauce mixture over it to coat.
7. Present over cauliflower rice a bed.
8. Add taste with garnish of freshly ground parmesan or crushed red pepper flakes.
