Ingredients:
2 zucchini, large
2 tbsp butter
1 lb ground beef
1 tbsp chili powder
2 tsp oregano, ground
1 tsp cumin, ground
1 tsp garlic powder
5 oz cheddar cheese
1/4 cup marinara/tomato sauce, low sugar
4 tbsp parsley, fresh
salt and pepper to taste
cooking oil spray

Instructions:
1. Set oven temperature to 375°F.
2. Cut the zucchinis half.
3. Scoop the zucchini seeds then sprinkle with salt. Set aside ten minutes.
4. Cut the zucchini seeds or flesh in the interim.
5. In a skillet set on medium-high, heat butter.
6. Add meat and sliced zucchini. Cook stirring for six to seven minutes.
7. Cook for another three to four minutes adding spices.
8. Add tomato sauce and simmer for yet another three to four minutes.
9. Cook spray greases a baking dish.
10. Stuff zucchini in ready baking dish with beef mixture.
11. Bake the zucchini for twenty-minute period.
12. Pull from the oven and top with shredded cheese.
13. Bake for still another five minutes, or until cheese melts.
14. Top with sliced parsley.
